Our Story
Phil’s Tara Hideaway sits on a piece of Stillwater history, officially recognized as a historic landmark in 2008. The building’s story dates back to 1929, when it first opened as Lynch’s Chicken Shack. After a fire destroyed the original structure in 1931, it was rebuilt in the log cabin style that still defines its charm today.
Over the decades, the Tara has gathered its fair share of lore—from whispers of bootlegging and gangster ties to the origins of its name, rumored to come from a previous owner’s dog.
In 1997, Phil Barbatsis transformed this storied space into Phil’s Tara Hideaway, blending its rich past with a fresh, welcoming dining experience. Partnering with Chef Nate Peterson, he crafted a menu rooted in Greek-Mediterranean flavors, emphasizing high-quality ingredients and creative dishes. From locally raised meats to fresh, daily-sourced seafood, every plate reflects a passion for bold flavors and seasonal inspiration.
